FFW Feature
This week’s FFW feature is Bluefin Tuna, the largest of the tuna species. Their torpedo-shaped bodies have an almost circular cross-section and can reach up to 13-feet and 2000 pounds, and they can live upwards of 40 years at sea. They get their name from the dark blue coloring on their back, including their prominent dorsal fin, and a translucent white on thier lower sides and belly.
Bluefin Tuna has a distinctive Medium-Full flavor, with a firm, meaty texture and large flakes and very desirable fat content. It is most commonly used as sushi or cooked rare thru medium-rare, with overcooking discouraged.
